Mini gluten-free cinnamon muffins

Yes, weekends are for baking! Yesterday I did some shopping for new kitchenware and I fell in love with this cute, mini muffin baking tin. It is so adorable, I really had to buy it. Searching for new baking tools gives me so much inspiration and excitement to rumble in the kitchen. I had this idea of making an English breakfast in a healthier way, but this mini muffin baking tin kept staring at me so mini muffins it is! When it comes to muffins, I am a true addict. From blueberry to chocolate chip. I can not resist them. A breakfast muffin seemed like a good idea. Unfortunately I am not such a fan of the regular size of a muffin. They keep whispering: eat me, eat me. So when I found this mini baking tin it almost felt like a dream come true. How awesome is this: you can eat all of the mini muffins without feeling guilty. A big yay for the person who invented this tin!

Summer is officially over and to get in the autumn mood let”s make: cinnamon muffins. It is such a great taste and great to combine with a hot cup of coffee or tea. The taste of cinnamon reminds me of cosy days. Great days to stay at home and to just start baking. This recipe is really simple and made in no time. Mini gluten-free cinnamon muffins

Great to take with you or with some yoghurt.


  • 35 g gluten-free oat flour
  • 2 g baking powder
  • 1/2 small egg
  • 10 g honey
  • 10 ml olive oil
  • 2 dashes cinnamon
  • pinch of sea salt
  • Step 1 Preheat the oven to 190° C and coat the baking tin with some olive oil
  • Step 2 Blend all the dry ingredients
  • Step 3 Whip the egg and add it together with the wet ingredients to the dry ingredients
  • Step 4 Mix the ingredients until it becomes a batter
  • Step 5 Spread the dough evenly in the baking tin and bake for 10 minutes. Let them cool and enjoy your mini cinnamon muffins!
